I am Janice, a thirty-something, relatively new stay-at-home mom from the Philippines. I have two daughters, Zoe and Ziya, ages 9 and 8, respectively. They are my kids from my previous marriage. Now, I also have a 4-month old baby boy, Ziggy, my first child with my boyfriend of three years, Kai. We have been a blended family for just two years. Our transition into being a blended family has been quite easy, though of course, it took all of us some time to adjust. I guess, you can call us a modern family, although I'd say that for the most part, we're just like everybody else. I'm a babywearing, homeschooling, coffeeholic, movie and book buff mom.   I blog about the ups and downs, adventures and misadventures of our daily life, thus, the title of my blog, Roller Coaster Ride.

Fun with Food Friday- Blueberry Muffins from Scratch!!

Today's recipe is one I received from a friend after going to pick fresh blueberries this week with Noah! Its super easy to make and has ingredients that you would typically have in your house!



Blueberry Muffins

  • 1 1/2 Cups Flour
  • 1/2 Cup Sugar
  • 2 tsp Baking Powder
  • 1/4 cup oil
  • 1 egg, slightly beaten
  • 1/2 cup milk
  • 3/4 cup blueberries

Preheat oven to 350. Sift the dry ingredients together with 1/2 tsp salt. Add oil, egg, and milk. Stir until they are mixed well. Gently fold in blueberries. Pour into sprayed or paper-lined muffin cups.
Bake for 20 to 25 minutes. Serves 4 to 6. (I doubled the recipe and was able to make 18 muffins!)


These are so delish and way better than the envelope mixes if you ask me! We used fresh blueberries that we had just picked, but frozen blueberries would probably work for this too! Its a super easy breakfast meal, or even a great snack!

Another Milestone for Little Guy!

We took Noah to his first movie in theater's today! We went to see Cars 2 of course! He is obsessed with the first Cars so we thought why not?! He did as well as expected for a 2 year old! He was fascinated at first, then got a little fidgety and wanted to talk, but we had plenty of snacks for him to keep him occupied. I was a little disappointed in the second movie. I definitely like the first movie better. As I think Noah does too.

But overall it was a great experience! We had fun and got to spend some good quality time as a family together! My little guy is growing up so fast!!

Potty Training Update-Week 2!!

So its been a week since we started potty training and I am proud to announce we are still going at it!! Noah is doing very well! For a few days last week he wasn't wanting to go in the potty or wear underwear and would even go as far as asking for a diaper! But we pushed through it and over the weekend it seemed like something just clicked and he started going in the potty and wearing the underwear and even keeping it dry! Yesterday we didn't have one single accident!! He made it to the potty every time!!

We even overcame the biggest issue I've heard most parents say they have, pooping in the potty! He was really scared at first and would try to hold it until he couldn't hold it anymore! But then Saturday when my mom was visiting we distracted him as best we could while he was on the potty and he went poop in the potty!!! It was a huge deal for us! And you could tell he was soooo proud of himself! So he's been going poop in the potty ever since too! He still gets a little bit scared when he has to go but he's been doing well!

The big issue we are having right now is going potty out in public. He doesn't want to sit on a public toilet and pretty much refuses. I need to find a portable potty to take with us to see if that helps. He will sit on the potty when we go somewhere like my mother-in-laws house but has yet to go in it. But of course lately when I go out I just put him in pull ups which are just like diapers so he usually just goes in those. If we continue to not have any accidents at home I will start to put him in underwear out and just bring lots of changes of clothes to try to get him to go while we're out! Crossing our fingers the progress keeps up!
