March Of Dimes- March for Babies

I have decided to join a team of friends and participate in the March for Babies this year. March for Babies is a 3 mile walk to raise money for babies that are born too soon or born sick. The money raised will go to March of Dimes research and programs that help moms have full-term pregnancies. It's also used to provide comfort and information to families with babies in the newborn intensive care unit.

My friend Amanda's son was born early and was in the hospital for a while and then I have shared with you about baby Gavin who is my friend Nacita's son. These stories have touched my heart and the least I can do for these families and others is raise some money and go for a walk.

Back to School!

I started my first day of my last quarter of college yesterday! I will graduate in June! I am soooooo excited! This quarter I only have one class and its a super easy class where basically I just have to show up and do the work. No lectures or new things to learn. Its going to be a breeze!

That being said, I hope to be able to blog a lot more than I was able to last quarter! I have some exciting things to talk about in the near future and as always, we will continue to have Mom Blog Monday blog hop, Fun with Food Fridays, and reviews and giveaways as well! I am a stay at home to three children all under the age of five and all three of my children have food allergies. In our home we deal with food allergies to milk, eggs, peanuts and tree nuts.  We are also beginning to homeschool our two oldest children. In addition to taking care of my kids and husband I am also a long distance runner and enjoy running half marathons.
My blog features information about food allergies, recipes and food allergy product reviews as well as fun activities and products to use with kids.

Fun With Food Friday- Easy Chicken Enchiladas

Welcome back to Fun with Food Friday! This week I tried a new recipe with the new Philidelphia Cooking Creams that just recently came out in stores!

Easy Chicken Enchiladas


What you Need

  • 1 Small Onion, chopped
  • 2 tsp oil
  • 3 cups shredded, cooked chicken breast
  • 1 can no salt added, diced tomatoes, drained
  • 1/2 cup Mexican Style Shredded cheese
  • 1 tub Philadelphia Santa Fe Blend Cooking Cream , divided
  • 8 flour tortillas (6 inch)
Make It

Preheat oven to 350 degrees
Cook and stir onions in oil in a large skillet on medium heat for 4 to 5 minutes. Stir in chicken, tomatoes, 3/4 of the cooking cream, and cheese. Simmer until warm. 

Spoon about 1/3 cup chicken mixture onto middle of tortilla. Roll up. Place in 13x9 inch baking dish that has been sprayed with cooking spray. Top with remaining cooking cream. Cover. 

Bake 15 to 20 minutes or until heated through. 

I made a few modifications to this recipe. We're not huge fans of onions so I just used a little onion powder on the chicken. To shred the chicken I just boiled it and then cut it up into small pieces and shreds. The tortillas I had were a little bit larger than the recipe called for but it still worked out. I topped the enchiladas with some more cheese as well as the cooking cream. 
This turned out so delicious! Everyone in this house loved it! It's so easy to make to! I will definitely be making this often for dinner from now on!

I've been such a lazy blogger!

I have to apologize! I promised lots of interesting posts when I was finished with school and I've given ya nothing! To be completely honest, I am just really enjoying my free time with my family and friends. I've been hanging out with Brian and Noah lots. And also other friends and family members. I've gone shopping with my sister, had playdates, and hubby and I even had a date night last night! It was great!

So yea, I've been a pretty pathetic blogger and I apologize. But I think you'll all agree with me that there's nothing more special than spending time with the people who mean the most to you in your life!

Some Q's for my Fellow Couponers

Ok so I've been couponing for about 6 months now but some things still confuse me or I still have trouble finding certain deals on things. So I thought I'd ask YOU how you do things with your coupons! Here's a few questions I have!

Do you shop at one store every week or will you shop at several stores to get the best deals? 


Are there certain things/brands that you will buy even if you don't have a coupon or do you only buy it if its a great price with a coupon?

How much do you typically spend a week on groceries, toiletries, household items, etc? Do you do this by a strict budget or just go in and get what you need? (you don't have to answer this if you don't want to)



What store do you usually find the best deals at? 


Do you consider it a good shopping trip if you save more than you spend or if you just don't spend as much as you planned? OR What do you consider a great shopping trip??


You can answer these in a comment or email me if you like! I feel like sometimes I do great and sometimes I don't do so hot. Like at Kroger I can never seem to save more than I spend but I do get good deals and I get the 10 cents off per gallon of gas by shopping at Kroger. At Publix I can save way more than I spend but they don't always have what I need/want on sale. I am trying to budget $100 a week on groceries, toiletries, everything. Sometimes I do great, like last week. Sometimes I don't do so great. Idk I just feel like at this point I should be able to get better deals, more free stuff, etc. I want to start stockpiling if I can.But haven't really been able to stock up on that many items at a time. Any tips for that?! Any tips at all would be soooo appreciated!!

Weekly Publix trip and my first trip to Walgreens with Coupons!

So I've been reading up on how things work at Walgreens and been getting together a running list of some deals I wanted to get this week. It didn't go quite as well as I planned but I did do pretty good. I was able to get two Irish Spring Deodorants for practically free with RR. And Purex 50oz bottles of detergent for only $1.99 each. They were completely out of the FREE Right Gaurd deodorants but I am going to check out another Wags today to see if they have them. I couldn't find the Reach toothbrushes that were on sale so I gave up on those. So I didn't come home with much but for my first time I don't think I did too bad.

- Irish Spring Deodorant 2/$6 (Used $1/1 coupon for each and got $4 RR back) = Free
- Purex Detergent 33 Load/50oz $2.99 (Used $1/1 coupon for each) = $1.99 ea.

Then after Walgreens I went to Publix! I haven't shopped there in about 2 weeks because I was going to Kroger but this week Publix had better deals. I can definitely say I missed my Publix! I was able to snag some free veggies and pasta this week and some super cheap Philadelphia cooking cream! I didn't have coupons for everything and even had to get some items that weren't on sale but I still did really good!

- Total at Publix $29.98 Saved $44.10

All this for $29.98 (minus the two liters and the protein powder lol)

Fun With Food Friday- Hashbrown Casserole!

This is a new favorite in our house! The boys gobble it up so fast! Its one of those mix it together how you prefer kinda meals, so my ingredients are more estimates than exact amounts. 


-3/4 of a bag of tater tots cooked
-small container of sour cream
- one can of cream of chicken soup
- meat of your choice (we use 1lb of ground turkey)
-about one package of shredded cheese

While tater tots are cooking, cook meat as well. Also mix the can of cream of chicken (with can of water added) and sour cream under medium/low heat until mixture is creamy. Once tater tots are cooked mash them into the bottom of a casserole dish. Then layer with meat, creamy mixture, and then top with cheese. Cover with foil and cook for about 25 minutes at 350 and then about 5 more minutes without foil. YUM!!!

Guess we're gonna give it a shot!

I got Noah some little toddler undies the other day and he seems to really like them, so next week while I'm home on spring break I'm going to work on potty training with him. I'm really clueless with all this but I'm going to give it a shot. He tells me every time he goes in his diaper and I even think he knows when he has to go because he goes and hides. Today he had the underwear on and went to hide to just go pee! So yep, we'll give it a go next week! Any tips will be GREATLY appreciated!

Tell me a bit about yourself and your family.  I'm a stay-at-home mommy to two little peanuts, Maria (15 months) and Clare (2 months).  I've been married to my husband Isaac for a little over 2 years, and we live in Minnesota, aka the frozen tundra of the U.S. (It's really not that bad, but it does get pretty cold this time of year!)  We enjoy going out to eat as a family (little Maria loves restaurants!), going boating and fishing on Minnesota's many lakes in the summer, and spending time with the grandparents (they love to spoil their granddaughters!).

O-M-G

I feel like I'm drowning in a sea of slideshows, accounting terms, and flash cards! And I still have another full day of studying to do! Boo! Finals for me are Monday and Tuesday! I cannot wait to be done! I am SOOOO looking forward to being done with this quarter! Next quarter is only one class and will be so much easier!

Sorry I've been a bit boring lately, but after Tuesday I promise to be a better blogger with more interesting posts...fun reviews and giveaways..and don't forget the My Little Toddler event coming soon!

Fun With Food Friday! Crunchy Onion Chicken!

This recipe is super easy! My mother in law, Jeannie, sent it to me and it was a hit!!

Crunchy Onion Chicken


4 chicken breasts
Honey Mustard

 One Can Fried Onions

Coat chicken in honey mustard. Then roll in crushed fried onions (the ones you use to make green bean casserole). Bake in a 350 degree oven for 45 minutes to one hour...until the juices run clear when you pierce the chicken with a fork.



This was really so easy to make! Its a little messy to prepare but that's not a big deal! When I gave dinner to Noah he said yum yum! So I know he enjoyed it! I liked it a lot too! I'm not big on onions but I like the french fried kind..and the honey mustard really added a nice flavor to it! The chicken was really juicy too! I used smaller strips because thats all I had thawed out, but I think the bigger chicken breasts would still be tender and juicy!

Talk About Me Tuesday- Dear Mommy Brain



What's your name?
Jen.  Jenny.  Jennifer.  Penn.  Penner.  Pendenda.  Plus another nickname that my mother gave me when I was 3.  That I will never tell you.  I’ve also advised my mom to never to tell you.  Even if under penalty of death.  Even if you offer her chocolate cake.

Tell me a bit about yourself and your family.
I am a 30-something, working mother of one crazy toddler in search of her sanity.  Without my good-intentioned husband helping with the cooking, cleaning, and diaper-changing, I would be a full-on mess.  Completing the menagerie is a co-dependent, neurotic, spaz of a dog and an evil, whiny, drive-by pooping cat.  Welcome to my circus.

You can stalk me at Dear Mommy Brain.  You can also follow me on Facebook and Twitter!  Not that I know how to use social networks…  But all the cool kids are doing it.  And I hate to be left out.

What is your blog about/What do you like to write about in your blog?
I have a hard time with labels.  Let me clarify.  I have a hard time identifying labels.  I love the structure of labels.  It makes my OCD happy.

But I am a cloth-diapering, real food eatin’, obsessively cheap, slightly crunchy, aspiring organization junkie.  So that’s what I write about.

What inspired you to start a blog?
I had been casually blogging to keep in touch with friends for a couple years when I stumbled upon The Pioneer Woman’s site.  I quickly fell in love and began to stalk her.  Soon, stalking wasn’t enough.  I wanted to BE her.  Well, without the impressions.  I know my limitations.

Do you have any blogging pet peeves?
I am plagued with awful eyesight and a short attention span, so blogs jam-packed with busy backgrounds, flashing buttons, and dancing babies aren’t my thing.  I also get really cranky when people obsess about “following.”  I really love when people enjoy my blog and want to read my posts, but I’m sorry, I may not follow back.  Don’t take it personally.  It’s not you, it’s me.

Do you have any big goals for your blog?
Would I love to be Heather Armstrong or Ree Drummond?  Sure!  But not really.  That’s a lot of pressure.  But if I can run a successful blog that continues to provide valuable information in an entertaining way?  That would be marv-e-lous. 

As for right now, I’m happy focusing on improving the quality of my writing and visual content.  Not to overhype, but I’ve got some exciting stuff on the horizon.  Assuming I can get what’s in my head on paper (screen?).

My blogroll is all over the place.  Everyday I read The Frugal Girl, Money Saving Mom, and Life as Mom as well as some smaller blogs, like Are we there yet?, Sara’s Organized Chaos, and Little Big.  And I nearly pee myself with excitement when Hyperbole and a Half does a new post.  I just love her.  But I could read blogs all day.  I really enjoy hearing what other people have to say and seeing all the different view points.  And laughing.  I love me some funny.

I'm THAT Mommy
 I'm a SAHM to an 8 month old baby girl. I've been married to my husband for three years in April. Before we had our daughter, we lived on the Upper West Side of Manhattan. We had a blast! Shortly after getting pregnant we moved to the suburbs. I quit my job as a litigation paralegal to stay home with my daughter which I think is the best decision I've ever made. I'm pretty fanatic about cloth diapers and encouraging breastfeeding. I love cooking and trying new recipes.



 

How I Organize My Coupons

Last week I wrote about where I get my coupons. You can view that post HERE. This week I want to talk about another question I get asked a lot when it comes to coupons. "How do you keep all those coupons organized?!"

When I first started using coupons and didn't have that many I used one of those accordion photo folders. I just had a few different sections labeled and stuck them all in there. But then I got tired of having to look through each and every coupon to find the one I was looking for. Even when it was in a section of its own, it became a lot of coupons to look through. So I started using a 3-ring binder. Here's all you need to make your own coupon binder.

  • A 3-ring binder- the bigger the rings, the better. Also, if you can find the kind that zips closed that is very helpful to make sure everything stays in and you don't lose anything. I got mine at Big Lots. 
  • Baseball Card Holders. They come in a really big pack for about $5. I got mine at Walmart. 
  • Dividers. This way you can section off your coupons how you want. I also got these at Walmart.
And thats all you need!

I section my binder into 9 sections. Food, Household, Toiletries, Pets, Baby, Publix, Target, Other Stores, and Medicine. You can divide your's up however you would like. I would eventually like to divide mine up into subsections such as dairy and frozen, etc. But that will have to happen later when I am finished with school and have more time on my hands.

All I do each week is clip my coupons and divide them up and put them in the baseball card holders by section. Most of the coupons will fit perfectly in each slot but some you may have to fold. Remember to put the coupon with the closest expiration date on top, if you have multiples of the same coupon.

I'm not going to lie or sugar coat it. It can be time consuming. Like right now I am way behind on organizing mine because I have been so busy with school. But one thing I am going to start is to also get a folder to stick the whole inserts in them by date. So probably another accordian folder... and as I have time clip and organize them in the binder. That way if I need a coupon from an insert I haven't clipped yet, I can still find it easily.

When I first checked out this product, I honestly didn't realize it went into the shower! When I received it and asked hubby to put it up, I was shocked that not only was it fogless but it went right into the shower! It took a little bit to set up but nothing major. Well guess what, it is REALLY fogless!! Doesn't fog up at all! I was so excited! Its nice and close so I can get all my makeup off without coming out of the shower with black streaks down my face! Hubby really likes it because he can shave IN the shower.

Overall I really like this product! It saves time and makes life a lot easier! Which is perfect for a busy mama like me!!

Fun With Food Friday! Week 1!



Welcome to Fun with Food Friday! I am excited to bring you new recipes each week that YOU, my followers, have sent me, and I review!

This week I am going to give a favorite recipe in OUR house! Both Brian and Noah LOVE it! It's fairly easy to make and makes for a great meal for the family or even for guests!!

Italian Breaded Pork Chops


Ingredients:
- 3 eggs, lightly beaten
- 3 tablespoons milk
- 1 1/2 cups Italian Seasoned Bread Crumbs
- 1/2 cup grated Parmesan cheese
- 2 Tablespoons olive oil
-4 cloves garlic, peeled and chopped (I just use some garlic powder)
- 4 pork chops
Directions:
1. Preheat oven to 325 degrees
2. In a small bowl, beat together the eggs and milk. In a separate bowl mix the breadcrumbs and cheese. (I also mix the garlic powder in to that mixture).
3. Heat the olive oil in a large, oven proof skillet over medium heat. If you are using real garlic, stir in the garlic and cook until lightly browned. Remove garlic, reserving for other uses.
4. Dip each pork chop  into the egg mixture, then into the bread crumb mixture, coating evenly. Place coated pork chops into the skillet and brown about 5 minutes on each side.
5. Place the skillet and pork chops in oven and cook about 25 minutes.















Great with any side you choose!! We love this dish! Its not just your plain Jane breadcrumb coating. Noah will literally eat a whole pork chop when I make this! And not want to eat anything else on his plate! We have this at least once a week!

My First Kroger Trip Using Coupons!

So as you know, I normally shop at Publix. But this week there were some pretty amazing deals at Kroger and I decided to go there. Spent all afternoon matching up coupons with the sales and decided to head out today with my sister and Noah. I've shopped at Kroger before but not since I started using coupons, so I was a bit nervous,  but I think I did pretty good.

I spent $67.96 and saved $49.28. At first I was pretty dissapointed that I didn't save more than I spent, but when I started getting out my groceries, I realized I did get quite a bit for only $67. So for my first time, I'm pretty happy!

Here's what I got:

Not bad right?! I got all those bodywash's for $1 each!! And the deodorant for $.99 each! Those were my big steals from the trip! So overall, I'm very pleased with my first Kroger trip using coupons!
